"Orbis is named for "Orbis Terrarum," Latin for world map, reflecting my love of travel."

"My menu is pretty much who I am, because I’m half Asian, half Italian and French trained. I really try for a new American bistro feel, which is a classic technique with different influences, such as Asian or North African. My dishes are straight-forward, with sauces being the key."

"It’s wonderful to have my own place and be able to create new dishes, while maintaining the integrity in my food that I want. I never skimp. When I use a sherry in a dish, I use a good sherry."
